ESTATE
Located in the heart of Chablis, the brilliantly talented Samuel Billaud was finding family politics hard going, so he has founded in 2009 his own estatel in Chablis separate from Domaine Billaud-Simon. However, with the sale of Domaine Billaud- Simon to Faiveley in 2014, Samuel has got back a proportion of the vineyards for himself.And since the begining of his own adventure, Samuel Billaud’s wines demonstrate his exceptional talent.
VARIETALS
Composition: 100% Chardonnay
Made from a 0,5 as parcel of 40 years old with a south-east exposure.
VINIFICATION
Harvest are manual. This wine is vinified only with natural yeast and in an ultra limited quantity: 2 500 bottles / year
TASTING NOTES
Eye: light color, typical of Chablis. Nice light reflection, sign of very good quality
Nose: it’s a smoky, intense and iodine wine. Very silex and mineral nots and with a ot of citrus notes, really rich and complex
Mouth: Really fine acidity and good purity with structure and balance. An endless finish who showcase Chablis at his best
