ESTATE
Located in the heart of Chablis, the brilliantly talented Samuel Billaud was finding family politics hard going, so he has founded in 2009 his own estatel in Chablis separate from Domaine Billaud-Simon. However, with the sale of Domaine Billaud- Simon to Faiveley in 2014, Samuel has got back a proportion of the vineyards for himself.And since the begining of his own adventure, Samuel Billaud’s wines demonstrate his exceptional talent.
VARIETALS
Composition: 100% Chardonnay
Blended from 2 parcels: one of 20 years old just nearby the 1er Cru Montee de Tonnerre and another one of 90 years old in front of the 1er Cru Vaillons
VINIFICATION
The wines are made on “lies” (they keep the sediments) and only in inox tanks (no wood at all thanks to keep the fresh and citrus notes of the Chablis)
TASTING NOTES
Eye: light color, typical of Chablis. Nice light reflection, sign of very good quality
Nose: There is note of citrus fruit, stones really typic from the best Chablis. Spicy notes on the second nose
Mouth: lots of fruits with apple, pear but also lemon and lime freshness, with a chalky and saline mineral feel
The wine from the nose to the end of the mouth is structured by a very nice minerality
