Domaine De L’Enclos Chablis 2023

Founded by siblings Romain and Damien Bouchard, Domaine de l’Enclos represents a new generation of Chablis winemakers committed to demanding organic viticulture. The family has been working in Chablis for generations. In 2015, they sold their father’s négociant business but retained the 39 hectares of vineyard previously owned by their mother’s family.

The domaine obtained organic certification in 2018, and their underground vinification cellar — five metres below ground — provides natural temperature regulation and is comprised primarily of small stainless-steel tanks, ensuring that the various parcels can be vinified separately.

The estate’s style aims for precise, saline, and luminous Chardonnays, true to the limestone energy of the Serein valley.

The fruit comes from four areas — Chablis, La Chapelle, Beine and Fontenay — with vines planted on marl and limestone soils, ranging from 15 to 50 years old. Debudding, canopy management and harvesting are all done by hand.

Vinification Vinification takes place in stainless steel tanks with indigenous yeasts, followed by nine months of ageing on lees without racking.

Eye Pale gold in colour.

Nose Fresh and intense, with citrus, green apple, white flowers, and damp chalk. Fresh citrus aromas of lemon and lime, green notes and cut grass, complemented by lemon tart, mint, almond, and mineral chalk.

Palate A lively attack, a silky texture, and a mineral and saline finish, typical of the great Kimmeridgian terroirs. The balance between tension and roundness makes this a pure, elegant, and approachable Chardonnay. Fruity flavours persist through to the finish, where notes of apricot and peach add a touch of softness.

Food Pairing Ideal as an aperitif or paired with grilled seafood and herbs, roasted poultry, or fresh cheeses. Also excellent with a seafood platter or andouillette.
